The Formula

The calculation works in layers:

  • Base Food Cost = Plates × (Per-Plate Price + Add-ons per Plate)
  • Service Charge = Base Food Cost × Service Charge % ÷ 100
  • GST = (Base Food Cost + Service Charge) × GST % ÷ 100
  • Grand Total = Base Food Cost + Service Charge + GST
  • Cost per Guest = Grand Total ÷ Plates
